GF Fruit and Nut Loaf

I saw this recipe floating around on Instagram and thought I’d recreate it using  some of my favourite healthy ingredients. As you guys probably know I make my banana and coconut loaf weekly (see other reel) but this has been such a nice change up.

Ingredients: 

Makes 2 smaller loafs (freeze one) or 1 big loaf

  • 1 3/4 buckwheat flour

  • 2.5 cups mixed nuts and seeds

  • 2.5 cups dried fruit

  • 4 bananas

  • 2 eggs

  • 1 tsp cinnamon

  • 1 tsp nutmeg

  • 1 tsp baking powder

  • 1 tsp baking soda

  • Pinch of salt

Instructions:

  1. Preheat oven at 180 degrees.

  2. Place all ingredients into the food processor. Blend until well combined.

  3. Pour into a lined baking loaf dish. It will make either 2 smaller loaves (slice and freeze one) or 1 big loaf.

  4. Bake for 20-30 minutes or until you prick the middle with a skewer and it comes out clean.

  5. Remover from oven. Place on a cooling rack and allow to cool before serving.
