Avocado Brownies

I was gifted an amazing box of Melrose products to play with in the kitchen. Included was some beautiful avocado oil. Normally I would use this as a salad dressing but today decided to make brownies using avocado.

Now this might sound like a weird combo to some, but trust me it is delicious and balanced with amazing fats, protein and is lower in sugar.

  • 2 large ripe avocados (mashed)

  • 1/2 cup coconut sugar

  • 1/2 cup cacao powder

  • 2 large eggs

  • 3 tbsp avocado oil

  • 2 tbsp coconut flour

  • 1 tsp vanilla extract

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/4 cup cacao nibs or dark chocolate


  1. Preheat oven at 150 degrees and line a baking tin with baking paper

  2. In a food processor add all ingredients except the cacao nibs and blend until well combined.

  3. Fold through he cacao nibs or dark chocolate.

    Alternatively if you do not have a food processor:

  4. Mix the avocado, eggs, vanilla extract, avocado oil together. Then mix the dry ingredients in until well combined.

  5. Pour mixture into the baking tin and bake for 25 - 30 minutes or until the middle is cooked.

  6. Remove and let cool and store in the fridge.
