I was gifted an amazing box of Melrose products to play with in the kitchen. Included was some beautiful avocado oil. Normally I would use this as a salad dressing but today decided to make brownies using avocado.
Now this might sound like a weird combo to some, but trust me it is delicious and balanced with amazing fats, protein and is lower in sugar.

2 large ripe avocados (mashed)
1/2 cup coconut sugar
1/2 cup cacao powder
2 large eggs
3 tbsp avocado oil
2 tbsp coconut flour
1 tsp vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup cacao nibs or dark chocolate
Preheat oven at 150 degrees and line a baking tin with baking paper
In a food processor add all ingredients except the cacao nibs and blend until well combined.
Fold through he cacao nibs or dark chocolate.
Alternatively if you do not have a food processor:
Mix the avocado, eggs, vanilla extract, avocado oil together. Then mix the dry ingredients in until well combined.
Pour mixture into the baking tin and bake for 25 - 30 minutes or until the middle is cooked.
Remove and let cool and store in the fridge.
