60 Second Chocolate Mug Cake

This week I have discovered the MUG CAKE and OMG it is to die for. After realising I was eating far too much sugar, I wanted to find an alternative without denying or restricting myself. This mug cake was exactly what I needed. Using the coconut sugar makes in low GI plus it can easily be made gluten and dairy free, depending on what flour and milk you choose.

Ingredients: Makes 2

  • 1/2 cup flour (I personally use buckwheat or coconut flour)

  • 4 tbsp cacao powder

  • 4 tbsp coconut sugar

  • 1 tsp cinnamon

  • 1/2 baking powder

  • 1/2 cup milk (I personally use almond or coconut milk)

  • 4 tbsp oil (I personally use the Melrose liquid coconut oil)

  • 1 tsp Pure Harvest Coco spread (optional - Found at supermarkets)

Directions:

  1. Mix all ingredients (except the pure harvest coco spread) together in a bowl until well combined.

  2. In both cups, scoop half of the ingredients into each mug.

  3. Followed by 1/2 a tsp in each mug of the pure harvest coco spread (if you are adding it)

  4. Then divide and top the remainder batter into each mug.

  5. Place into the microwave for 60 seconds. 

  6. Enjoy the goodness.
