This recipe was created when chocolate was needed. Rather than just eating chocolate, I decided to make something that would satisfy the sweet cravings as well as give me a good dose of nutrients. Now although this is healthy it is still high in sugar so best to be enjoyed as a part of your weekly 20%.
1/2 cup dates
1/2 cup almonds (or any nuts)
1 cup nut butter (I used Melrose ABC butter)
1/4 cup coconut oil (I use melrose liquified coconut oil)
1/4 cup cacao powder
1 tsp cinnamon
1 tsp vanilla extract
1/4 cup crushed almonds (decoration)
In a food processor. Mix the base ingredients. Once the ingredients is mixed, press it firmly in the bottom of a lines baking tray and place in the freezer.
Add the dates, nut butter and coconut oil into your food processor and blend until well combined.
Add the cacao powder, cinnamon, and vanilla extract and continue processing until mixed.
Pour and press the fudge mixture on top of the base.
Crush the almonds and press into the top of the fudge mixture. Place in the freezer for 2 hours.
Remove and slice as you desire. I personally like this in bite sizes. Store in an air tight container in the fridge.
