Salted Caramel Raw Treats

I have been craving salted caramel anything lately. So I decided to whip up these raw treats to satisfy the craving. These are gluten free, dairy free and refined sugar free, plus so much cheaper than buying raw treats in a store.

Ingredients:

Base:

  • 2 cups cashews

  • 1/4 cup dates

  • 3 tbsp rice malt syrup

  • splash of water (if needed for consistency)

Caramel:

  • 1 cup dates (soaked or medjool)

  • 3/4 cup nut butter (I used pics PB)

  • 1/2 cup rice malt syrup

  • 1/4 cup coconut oil (I use Melrose liquid coconut oil)

  • 1 tsp sea salt

  • 1 tsp vanilla essence

Chocolate:

  • I block of dark chocolate (I used Loving Earth)

Method:

  1. Starting with the base, blend all ingredients until well combined and sticky.

  2. Press into a silicone tray and freeze

  3. Make the caramel add all ingredients into a blender and blend until smooth and creamy.

  4. Pour caramel evenly over the base and place back in the freeze.

  5. Meanwhile on a stove top, place a pot on low heat and break the chocolate up in the pot. Stir continuously until melted.

  6. Pour chocolate evenly over the caramel and place back in the freezer.

  7. Keep in the freezer, until 15 minutes before serving.
