Balanced Kentucky Bowl

Ingredients: serves 1
- Chicken recipe see here
- 1 cup rocket
- 1/4 cup quinoa or rice
- Enoki mushrooms (any mushrooms is fine)
- 40g goats cheese
- 30g hazelnuts (chopped)
- juice of a lemon
- 1 tbsp Black sesame seeds
Instructions:
- In a bowl add rocket, cooked quinoa or rice, goats cheese and hazelnuts.
- On a fry pan stir fry the mushrooms for 1 - 2 minutes in a splash of olive oil. Stir through the bowl.
- Squeeze lemon juice over the top and sprinkle sesame seeds to serve.
