Balanced Kentucky Bowl


Ingredients: serves 1

  • Chicken recipe see here
  • 1 cup rocket
  • 1/4 cup quinoa or rice
  • Enoki mushrooms (any mushrooms is fine)
  • 40g goats cheese
  • 30g hazelnuts (chopped)
  • juice of a lemon
  • 1 tbsp Black sesame seeds


  1. In a bowl add rocket, cooked quinoa or rice, goats cheese and hazelnuts. 
  2. On a fry pan stir fry the mushrooms for 1 - 2 minutes in a splash of olive oil. Stir through the bowl. 
  3. Squeeze lemon juice over the top and sprinkle sesame seeds to serve.
