Chilli Con Carne with Cauili Rice

This is another healthy and simple meal. It is great for a meal prep or to store the left overs in the freezer for nights or days where you are time poor. I always have basic meals like this stashed away in my freezer, it honestly makes life easy and helps avoid any poor food choices.

Ingredients:

  • 500g turkey or pork mince
  • 1 red capsicum
  • 1 tin kidney beans (drained)
  • 2 tbsp tomato paste
  • 1 tin crushed tomatoes
  • 1 cup chicken bone broth
  • 3 garlic cloves (diced)
  • 1 long chilli (diced)
  • 2 tbsp oregano
  • 1 tbsp cumin
  • 1 tbsp paprika
  • salt and pepper to taste
  • cauliflower rice to serve

Instructions:

  1. Heat the oil in a large, deep frying pan over high heat. Add the capsicum, onion, chilli and garlic. Reduce heat to medium-low. Cook, stirring often, for 10 minutes or until soft.
  2. Increase heat to high. Add the mince and cook, breaking up any lumps with a wooden spoon, for 5 minutes or until the mince changes colour. Add the tomato paste and stir to combine. Add the tomato, broth, and dried herbs. Bring to the boil. Reduce heat to medium-low and simmer for 25 minutes or until liquid has reduced. Stir in the beans. Cook for 3 minutes or until warmed through.
  3. Serve on a bed of cauliflower rice, top with greek yogurt, coriander and extra chilli if you desire.
