I have tried to make Cauliflower pizza bases before and they just didn't work. This time though they worked a treat. With my mum coming to visit I decided to give hem another go, with some back up pizza base just incase they were a fail, but they were delicious. This base actually cuts into slices, was easy to pick up and didn't fall apart like other cauliflower bases I have tried in the past.
Ingredients: Makes 2
- 1 large head (about 1kg) cauliflower, trimmed, cut into florets
- 2 eggs, lightly beaten
- 1 teaspoon dried oregano
- 1/3 cup almond meal
- 1 tbsp nutritional yeast (optional)
- olive-oil spray
Place cauliflower florets in a food processor or blender in 2–3 batches. Blend florets until finely chopped, retaining some texture.
Transfer cauliflower to a microwave for 8 minutes. Drain well and leave to cool completely.
Preheat oven to 180°C. Line 2 large pizza trays with baking paper. combine all ingredients and mix until well combined.
Seperate the mixture with your hands into two balls. Using your hands press mixture into 2 x 22cm rounds, each about 3–4mm thick. Use a paper towel to pat away any excess water from the bases.
Place in the oven baking for about 15min each side.
Top with ingredients and place in the oven again for desired time.
