I made these orange chocolate truffles as a dessert Chrissy day and they were delicious. They could easily be made for a healthy snack or dessert when entertaining.
1/4 cup orange juice
1/2 cup almonds
2 cups of dates
1/2 cup shredded coconut
2 tbsp chia seeds
pinch of salt
1/2 cup cacao butter (melted)
1/2 cup cacao powder
1/2 cup rice malt syrup
In the food processor add all the truffle ingredients. Process until the mixture is well combined and clumped together.
Line a tray with baking paper. Wet your hands and roll the ingredients into golf ball sizes.
Place in the fridge or freezer until cold
Meanwhile in a pot melt the chocolate ingredients. Pour into the processor and blend for 2 minutes or until the mixture is well combined.
Remove the balls from the fridge or freezer and dunk them into the chocolate. Coat well and place on the tray. Top with crushed almonds if you desire.
Repeat this process until all the balls are coated in the chocolate.
Store in the fridge.
Let the balls sit for 24hrs to allow the orange flavours to permeate.
