Citrus Balsamic Salad

Fresh, juicy and delicious. Another summer salad perfect for a side dish to any main meal.

Ingredients:

  • 2 oranges (peeled and segmented)

  • 2 cups green beans (trimmed)

  • 2 red onions (thinly sliced)

  • 1/4 cup olive oil

  • 2 tbsp balsamic vinegar

  • 1 tbsp coconut sugar

  • Mint leaves

Instructions:

  1. Bring a pot of water to the boil. Add the beans and cook for 2 - 3 minutes. You want the beans crunchy. Rinse under cold water.

  2. Heat a fry pan and cook the onion until transparent. Add the balsamic vinegar, coconut sugar, and olive oil. Cook for 2 minutes whilst staring continuously. Remove from heat.

  3. In a large bowl add the beans, oranges, red onions and mint leaves.

  4. Drizzle the dressing over when ready to serve.
