Fresh, juicy and delicious. Another summer salad perfect for a side dish to any main meal.
2 oranges (peeled and segmented)
2 cups green beans (trimmed)
2 red onions (thinly sliced)
1/4 cup olive oil
2 tbsp balsamic vinegar
1 tbsp coconut sugar
Bring a pot of water to the boil. Add the beans and cook for 2 - 3 minutes. You want the beans crunchy. Rinse under cold water.
Heat a fry pan and cook the onion until transparent. Add the balsamic vinegar, coconut sugar, and olive oil. Cook for 2 minutes whilst staring continuously. Remove from heat.
In a large bowl add the beans, oranges, red onions and mint leaves.
Drizzle the dressing over when ready to serve.
