Italian Scramble

This is a nutritious and delicious way to start your day. It has a beautiful balance of your macros including fats, protein and carbohydrate and will leave you full for hours.

Ingredients: Serves 1

  • 1 tin crushed tomatoes

  • 1 glove of galic

  • 1 tsp basil

  • 1/4 cup Enoki mushrooms (normal mushrooms are also fine)

  • handful spinach

  • 3 eggs

  • 1 tsp ghee or butter

  • 1 - 2 pieces of toast. I personal use Venerdi Paleo Bread

  • Salt and chilli flakes to taste


  1. In a pan cook the garlic until golden. Add the crushed tomatoes and basil and simmer down until the liquid is absorbed. Leave aside.

  2. Meanwhile crack your eggs into a bowl and whisk well. Add your mushrooms and pour onto a seperate fry pan. Cook, staring continuously and until well cooked.

  3. Cook you toast, once cooked spread the butter or ghee.

  4. Top your toast with spinach, 1 - 2 tbsp of the tomato sauce and scrambled eggs. Sprinkle salt and chilli to taste and serve.

  5. Enjoy
