Delicious and satisfying. I absolutely love eggs for breakfast, lunch or dinner. They are such a nutrient packed food.
In this bowl we are getting our carbohydrates from the beautiful greens, our fats from the avocado and olive oil, and our protein from the eggs.
This bowl will leave you feeling full for hours.
Ingredients: Serves one
1 cup kale (chopped)
1/2 cup chopped broccolini
2 eggs (poached)
1 tbsp white vinegar
1/4 - 1/2 avocado
1 - 2 tbsp butter
1/2 fresh chilli
Salt and pepper to taste
In a fry pan, melt butter. Add the kale and broccoli and sauté for 5 minutes. Add salt and pepper to taste.
Meanwhile bring a pot of water with white vinegar to boil. Once boiled, turn down heat slightly and crack two eggs in the water. Once they float to the surface spoon out and drain.
Serve layering the greens, egg, avocado and top with chilli.
