Who else is excited that the Mangos are back in season? I sure am, and to kick off the Mango season I thought I’d start with making a beautiful mango swirl that could be added into my oatmeal for the week.
Ingredients: Serves 2
1/2 cup oatmeal
1 1/2 cups milk (of your choice, I use almond)
1 tsp cinnamon
2 tbsp protein topper
1 whole mango (frozen)
1 banana (frozen)
splash coconut water
Toppings of your choice (I used blueberries, strawberries, almonds, coconut)
In a saucepan over high heat add oatmeal and almond milk. Bring to a boil and then reduce heat to low. Add in cinnamon and protein topper and stir continuously until the liquid is absorbed and you have a thick creamy consistency.
Meanwhile in a blender add mango, banana and enough coconut water to allow for blending. Blend until a thick creamy consistency.
In a bowl add oatmeal the mango swirl and top with what ever ingredients you like.
