15 Minute Burrito Bowl

Mexican and a quick and easy meal. It’s exactly what we need, especially for a mid week meal or a quick and easy lunch meal prep. This dish literally took me 15minutes, if that.

Ingredients: serves 4

  • 500g chicken or turkey mince

  • 1 onion (diced)

  • 2 cups vegetables (I used capsicum, corn, carrot, mushrooms, peas)

  • 1 can cannellini beans

  • 1 cup brown rice

  • 2 tbsp tomato paste

  • 1 tsp Freedom Spices Taco seasoning

  • 1 avocado


  1. Heat a medium pan with oil. Add onion and cook until browned.

  2. Add in mince meat and continue cooking until golden.

  3. Add in your vegetables and mix well.

  4. Stir through tomato paste, cannelloni beans and Taco seasoning and cook for a further 5 or 10 minutes.

  5. Meanwhile cook your rice and dived roughly 1/4 cup between bowls.

  6. Divide your mince and vegetables. Top with avocado and serve.
