San Choy Bow

This is possibly the easiest meal in the world.
Lately as an easy lunch time option I have been making the mince component and freezing it. Some days I will serve it with avocado, other days in the lettuce cups and some days just as is with a mix salad. Always having this in my freezer is a great option for when ever I am stuck.

Ingredients:
- 1 tbsp coconut oil
- 2 garlic gloves
- 2cm grated giner
- 500g lean pork or chicken mince
- 1 tbsp tamari
- 1 tbsp oyster sauce
- 1/2 lime juiced
- 3 lettuce leaves
- 1/2 cup cherry tomatoes
- handful bean shoots or sprouts
- 1/2 avocado
Instructions:
Heat wok over high heat until hot. Add coconut oil. Add garlic, ginger and pork. Stir-fry for 2 to 3 minutes or until pork is golden.
Add tamari, oyster and lime juice and cherry tomatoes. Stir-fry for 3 minutes or until heated through.
Spoon pork mixture into lettuce leaves. Sprinkle sprouts and top with avocado.
