Well this is a winner. Sometimes I swear I say this about every meal but if Macca gives me the big thumbs up I know it really is a winner haha.
This is the perfect bowl of flavour, colour which means lots of vitamins and minerals, protein and some nice clean carbohydrates.
2 tablespoons coconut oil
- 500g lean beef mince
1 cup quinoa
- 1 tbsp fish sauce
1 tbsp tamari
2 tbsp sweet chilli coconut aminos (or just use extra tamari and chilli flakes)
- 1 lemongrass stalk
1 cup snow peas, trimmed, finely shredded
2 carrots, finely shredded
1/2 cup fresh basil to serve
1/3 cup roasted salted peanuts, chopped
1 long fresh red chilli, thinly sliced
Lime, to serve
- Boil a small pot with 1 cup of water and 1 cup of quinoa. Stir often to avoid sticking to the pan.
- Meanwhile heat a pan with the coconut oil. Add beef mince, fish sauce, tamari, coconut aminos, lemon grass stalk. Cook until golden brown.
- Finely chop carrots and snow peas.
