Lemongrass Beef Bowl

Well this is a winner. Sometimes I swear I say this about every meal but if Macca gives me the big thumbs up I know it really is a winner haha. 

This is the perfect bowl of flavour, colour which means lots of vitamins and minerals, protein and some nice clean carbohydrates.

Ingredients: 

  • 2 tablespoons coconut oil

  • 500g lean beef mince
  • 1 cup quinoa

  • 1 tbsp fish sauce
  • 1 tbsp tamari

  • 2 tbsp sweet chilli coconut aminos (or just use extra tamari and chilli flakes)

  • 1 lemongrass stalk
  • 1 cup snow peas, trimmed, finely shredded

  • 2 carrots, finely shredded

  • 1/2 cup fresh basil to serve

  • 1/3 cup roasted salted peanuts, chopped

  • 1 long fresh red chilli, thinly sliced

  • Lime, to serve

Instructions:

  1. Boil a small pot with 1 cup of water and 1 cup of quinoa. Stir often to avoid sticking to the pan.
  2. Meanwhile heat a pan with the coconut oil. Add beef mince, fish sauce, tamari, coconut aminos, lemon grass stalk. Cook until golden brown.
  3. Finely chop carrots and snow peas.
