Banana and Coconut Bread

BANANA AND COCONUT BREAD IS HEALTHY AND A MUST TRY! Gluten free, refined sugar free and diary free. The perfect weekend healthy treat.

Ingredients:

  • 1, 3/4 flour (I use buckwheat flour)

  • 1/2 cup coconut sugar

  • 1/2 cup coconut oil

  • 1/4 almond or coconut milk

  • 2 eggs

  • 2 tsp. gluten-free baking powder

  • 1 tsp. ground cinnamon

  • 3 ripe bananas, mashed

Method:

Preheat the oven to 180°C/160°C fan forced. Grease and line the base and sides of a loaf pan

  1. Combine all ingredients in a large bowl. Mix well with beaters or in a food processor.

  2. Line a bread loaf with baking paper. Pour the ingredients into the tin.

  3. Sprinkle the load with coconut flakes (optional) and place in the oven for 20 - 30 minutes or until you can poke a skewer through the middle and it comes out clean.

  4. Store in a container in the fridge for extra freshness.
