BANANA AND COCONUT BREAD IS HEALTHY AND A MUST TRY! Gluten free, refined sugar free and diary free. The perfect weekend healthy treat.
1, 3/4 flour (I use buckwheat flour)
1/2 cup coconut sugar
1/2 cup coconut oil
1/4 almond or coconut milk
2 tsp. gluten-free baking powder
1 tsp. ground cinnamon
3 ripe bananas, mashed
Preheat the oven to 180°C/160°C fan forced. Grease and line the base and sides of a loaf pan
Combine all ingredients in a large bowl. Mix well with beaters or in a food processor.
Line a bread loaf with baking paper. Pour the ingredients into the tin.
Sprinkle the load with coconut flakes (optional) and place in the oven for 20 - 30 minutes or until you can poke a skewer through the middle and it comes out clean.
Store in a container in the fridge for extra freshness.
