What's on the dessert menu this Christmas Free Birds?
Today I have whipped up this Spiced Pumpkin Nut Tart and it is delicious, I made a little one to taste test ;).
This tart ticks all the boxes. It's Christmasy, vegan, gluten free, dairy free and refined sugar free. Trust me your guests will love it.
- 1 cup dates
- 1 cup raw almonds
- 1 cup raw walnuts
- ½ cup shredded coconut
- 2 cups pumpkin puree
- 1 cup cashews
- 1/2 cup maple or rice malt syrup
- 1/4 cup coconut cream
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 ground ginger
- 1 tsp vanilla bean
- 1/4 tsp pink Himalayan salt
- Top with coconut flakes or I used healthy white chocolate coated nuts.
